Fish in School Hero Programme

Year 10 GCSE Food Nutrition & Preparation have had the opportunity to cook with wild Alaskan salmon as part of the Fish in School Hero programme with Mrs Workman.

They learnt about the provenance of the salmon, how to skin fillets and cooked a wide range of skills that demonstrated excellent cooking skills. They worked in small teams to create sweet and our salmon noodle stir fry, salmon goujons, salmon fishcakes and tarragon and salmon tart with a tomato concasse and homemade mayonnaise.

It was a great opportunity to collaborate, try new flavours and food like salmon and tarragon and try new skills including making mayonnaise and skinning salmon.
